I decided to make sweet potato chicken nuggets, and they were a hit! We had some debating over what to dip them in… I made a dill mayo (yum!) and the kids chose ketchup! 🙃

Sweet Potato Chicken Nuggets


1 sweet potato, peeled and grated
1/2 a red onion, grated
1 lb of ground chicken
1 tsp of garlic powder
1 tsp of paprika 
1 tsp of Italian seasoning
Dash of salt 


Preheat oven to 375 F. Mix all ingredients together in a bowl. Form into small chicken nuggets and place on a baking sheet lined with parchment paper. Bake for approx. 25 mins, flipping the nuggets halfway through. Serve with dipping sauce of choice (we like mayo mixed with fresh dill!). Enjoy!
