Cauliflower and Lentil Soup
Ingredients:
1 onion, chopped
1 stalk celery, chopped
1 carrot, chopped
1 garlic, minced
1 head of cauliflower, chopped
1 cup uncooked red lentils
6 cups of chicken broth (or any type of broth)
1 can of diced tomatoes
Salt and pepper to taste
Directions:
In a saucepan over medium-high heat, drizzle some oil and sauté the onion, carrot and celery. Cook for a few minutes. Next, add the cauliflower and garlic. Cook for 1 minute. Then add the lentils, broth and tomatoes. Bring to a boil and then simmer for about 30 mins. Purée with a hand blender until smooth. Add salt and pepper to taste. Enjoy!
