A recipe from our co-worker Louise! She had a delicious homemade salsa on her lunch. I had to recreate it! I went to the garden, grabbed 2 red tomatoes, 1 yellow tomato, I small red onion, 1 orange pepper and a handful of parsley! I chopped it all up, added the juice of half a lemon, and some salt. 🍅And that’s it! Louise uses cilantro in her recipe, but I opted for parsley. 🌿 This is the perfect way to use up all of those odds and ends in the garden! Because it’s a fresh salsa, you’ll need to eat it up within a day or two. We enjoyed them with our dinner tonight with some corn chips!
