These eggs cups are a staple in our house – mostly because they can be made in large batches and heated up through the week for a quick breakfast when we are all rushing out the door! 🍳 Hope you enjoy!
12 slices of ham
1/4 cup of finely chopped spinach
1/4 cup of finely chopped red pepper
Dash of salt and pepper
Preheat oven to 350 F. Spray a 12 cup muffin tin with cooking spray. Next, line each muffin cup with a slice of ham. In a measuring up, whisk the 8 eggs. Add the spinach, red pepper, salt and pepper and a small handful of grated cheese. Stir together. Poor the egg mixture evenly in each muffin cup. Top each one with a bit more grated cheese. Bake for 15-18 minutes, or until the egg is cooked through. Enjoy! Leftovers can be stored in the fridge and heated up to eat the next day.
Note: these egg cups were made on Valentine’s Day – hence the heart shaped muffin tins used. You can make these with any type of muffin tin!
