This white bean soup is the best soup I have made in a while! I made it on a whim, needing to use up some white navy beans I cooked and had to eat up. I am starting to freeze meals for our family, now that our busy season is almost here. I love having soup ready in the freezer! I froze this batch in a Super Cube, which is my new favourite product in the kitchen! If you want to try one too, check them out here! This little silicone tray has portioned out 1 cup portions. Add your soup or meal in each portion, freeze it, and then pop it out and put in a Ziplock bag!
White Bean Soup
Ingredients:
1 onion, diced
1 celery, diced
1 carrot, diced
2 potatoes, diced
1 cup of cooked navy beans (or 1 can)
4 cups of vegetable or chicken broth
2 large handfuls of spinach
dash of salt, pepper and thyme
Directions:
In a large saucepan, drizzle a bit of oil and sauté the onion, celery and carrot for 3-5 minutes. Next, add the potatoes and beans and stir. Add the broth. Bring to a boil, and then let simmer for 20-30 mins. Add the spinach and stir. Cook for about 5 more minutes. Add salt, pepper and thyme, to taste. Enjoy!
