
This hearty soup is great for easy meals through the week! This soup is even better the day after you make it because the quinoa has time to soak everything up and the soup gets nice and thick! 😋
Ingredients:
2 carrots, diced
1 onion, diced
2 celery stalks, diced
2 cloves of garlic, minced
1-2 cups chopped leftover turkey
1 cup dry quinoa
1 can of diced or crushed tomatoes
6 cups of broth of your choice
Directions:
In a large saucepan, sauté the carrot, onion and celery for a few minutes. Add the garlic and sauté for 1 minute. Add the broth and quinoa, and cook for 10-12 mins on low, or until the quinoa is cooked. Add the tomatoes and turkey and cook for about 10 more minutes. Season with salt and pepper, to taste. Enjoy!
