Last year I started making these mini apple crisps for my daughter’s school lunch and they have now turned into a family favourite! These apple crisps are full of good ingredients and sweetened with honey! Perfect to stay fuelled all day long! 💪 I like to make a double batch and keep them in the freezer! When I pack lunches, I take them out and send them frozen. By the time lunchtime comes, they are thawed and ready to eat! 🍎 These are great snacks for us adults too! 😉

Ingredients: 

8 apples, peeled and chopped 
1 cup of rolled oats
1/4 cup of flour (any kind – white, whole wheat, gluten free, etc.)
1/4 cup of hemp hearts
2 Tbsp chia seed
1 tsp cinnamon 
1/4 cup of honey 
1/4 cup of oil (any kind – I use grapeseed or avocado oil)

Directions: 

Preheat oven to 350 F. While the oven is preheating, prepare the topping. In a large bowl, mix together the oatmeal, flour, hemp hearts, chia seed and cinnamon. Next, add the honey and the oil. Mix it until it is all combined. To assemble the apple crisps, line a muffin tin with silicone liners (note: this recipe did not work when I used paper liners). Fill the muffin cups with the chopped apples. Next, spoon the topping on top of the apples. Bake in the oven for about 30-35 mins, until the apples soften up and the topping gets golden brown.
