I’m always looking for new ways to add fresh herbs to our dinner! 🌿
One night I decided to throw some in a food processor with some kale, garlic, olive oil and nutritional yeast, and this simple pesto was born! I cook any noodle I have on hand, add this pesto, and my kids call it “dinosaur noodles”! It is so quick, and very versatile with any herbs or greens you have growing in your garden! It is also a little different than traditional pesto since it’s nut-free and dairy-free. But this would also be delicious with a handful of pine nuts and parm cheese thrown in! This pesto tastes best with ingredients straight from the garden! 🍃
Ingredients:
3-4 large kale leaves
1 handful of basil
1 handful of parsley
1 clove of garlic
1/4 cup of nutritional yeast
1/4 cup – 1/2 cup of olive oil
Salt and pepper
Directions:
Add all ingredients to a food processor. Process on low speed until everything is combined (scraping down the sides). Add the sauce to any cooked noodle of your choice. Enjoy!
