
Ingredients:
1 lbs ground beef
1 carrot, chopped
1 onion, chopped
1 celery stalk, chopped
1 potato, peeled and chopped
1 sweet potato, peeled and chopped
2 gloves of garlic, minced
3 cups of beef broth
1 can of diced tomatoes*
Salt and pepper, to taste
Directions:
In a large saucepan, brown the ground beef. Next, add the carrot, celery and onion and cook for 3-5 minutes. Add the garlic, potato and sweet potato and cook for 1-2 minutes. Add the beef broth and tomatoes, and salt and pepper. Bring to a boil and then simmer for about 30 minutes.
* If you have frozen stewed tomatoes from the summer, use them instead of a can of tomatoes.
