Cabbage and Rice Soup
Ingredients:
1 carrot, diced
1 celery stalk, diced
1 onion, diced
1/4-1/2 head of cabbage, chopped (I used 2.5 cups chopped)
4 cups of veggie or chicken broth
1 can of crushed tomatoes
3/4 cup of noodles, rice or lentils
Salt, pepper and thyme
Directions:
Add a little bit of oil to a pot and sauté the celery, carrots and onion over medium-high heat for about 3-4 mins. Next, add the chopped cabbage and sauté for 1-2 mins. Add the broth and tomatoes and stir. Next, add the rice (noodles or lentils would be good, too!). Cook the soup on low heat until the noodles/rice/lentils are cooked through. Add some salt, pepper and thyme, to taste. Enjoy!
*Notes:
– instead of adding uncooked noodles, rice or lentils, I used 2 cups of leftover cooked rice.
– This soup is a thick soup. If you prefer it thinner, just add a bit more broth!
