Butternut Squash Soup
Ingredients:
1 carrot, diced
1 celery stalk, diced
1 onion, diced
1 clove of garlic, chopped
1 butternut squash, peeled and diced
1 apple, diced
4-6 cups of veggie or chicken broth
Dash of salt, pepper and thyme
Directions:
Heat oil in a saucepan over medium-high heat, and sauté the carrot, onion and celery for a few minutes. Add garlic and cook for one minute. Add squash, apple and broth (broth should just barely cover the squash in the pot). Bring to a boil, and then bring down to a simmer. Let the soup simmer for at least 30 mins (up to 60 mins), until the squash is cooked through. Add salt, pepper and thyme, to taste. Turn off the heat and purée the soup with an immersion blender. You can add a bit more broth if the soup is too thick. Store in the fridge for about 5 days. Enjoy!
