
Ingredients:
2-3 bananas, mashed
2 eggs
1/2 cup Marlin honey
1/4 cup oil
1/2 cup milk
1 tsp. vanilla
1.5 cups flour
1 cup oats
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 – 3/4 cup chocolate chips
Directions:
Preheat oven to 350 F. In a large bowl, mix together the bananas, eggs, honey, oil, milk and vanilla. Next, add in the dry ingredients: flour, oats, baking powder, baking soda, and cinnamon. Stir together until it is mixed well. Fold in the chocolate chips. Grease 2 muffin tins. Spoon the mixture into the muffin tins. This recipe makes about 18 muffins. Bake for 18-20 minutes, or until they have a nice golden colour and the inside is cooked through (check with a toothpick or uncooked spaghetti noodle).
