These apple and zucchini muffins are packed with all of the things that will keep the kids fuelled for the day! They were also so easy to make! It takes only minutes to grate a couple of apples and a zucchini! We hope you enjoy these muffins!
1 cup grated apple (approx 2 apples)
2 cups grated zucchini (1 zucchini)
1 1/2 cups oat flour
1/2 cup oats
1/2 cup honey
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 cup raisins
Preheat oven to 350 F. First make the oat flour. Place 1 1/2 cups of oats in the blender and blend until it looks like flour. This will yield 1 1/2 cups of oat flour. Set aside. Then, squeeze the grated zucchini to get the excess water out. Combine the grated apple, zucchini, egg and honey to a mixing bowl. Add the oat flour, oats, baking soda, baking powder and cinnamon. Fold in the raisins. Spoon the batter into a 12 muffin tin. Bake for 18-20 mins. Enjoy!
I used Melba apples to make these muffins – and their tangy flavour is delicious in baking! I also have so many zucchini in the garden at the moment, so it was a no-brainer to add it to these muffins!
